Soup with meatballs, mushrooms,spaghetti and cheese

This is a great warm winter soup. It takes only 30 minutes to cook, but it vanishes even faster than it took you to cook it.

Ingredients:
1 pound(s) minced pork, people
1/2 piece(s) white onion
3 piece(s) medium potatoes
8 piece(s) button mushrooms
2 piece(s) sprouts green onion
1/2 cup(s) chopped dill
1 teaspoon(s) salt
2 pinch(es) italian seasoning
2 piece(s) medium bay leaves
3 quart(s) water
1/4 pound(s) thin spaghetti
3 slice(s) provolone cheese

Instructions:

Step 1: Prepare your minced meat by adding 1/2 teaspoon of salt, pinch of Italian seasoning and 1/4 of a chopped onion.
Step 2: Set a 4 qt. pan filled with 3 qt. of water on a stove.
Step 3: Wait until the water starts boiling, form mid-sized meatballs and put them into the boiling water. Turn the heat to medium.
Step 4: Peel your potatoes, wash and cut in mid sized pieces.
Step 5: Add your potatoes to the meatballs, then add 1/2 teaspoon of salt and 1 pinch of Italian seasoning.
Step 6: Wash your mushrooms, cut in quarters and add to your soup.
***Tip from Helen** It is better to cut mushrooms in quarters, this way they will keep more flavor!***
Step 7: Boil the spaghetti in a different pan, when cooked, drain, cover your spaghetti with cheese slices and let it melt. Set aside.
Step 8: Wash your onion sprouts,dill and finely chop it.
Step 9: When your potatoes and meatballs are ready, add the dill and spring onion. (In about 25 minutes from the time you started cooking the soup) and turn the gas off.
Step 10. When you wish to serve your soup add spaghetti with cheese into the plates first and then pour the soup.

Apple Gorgonzola Mini Tarts

This recipe is perfect for entertaining…these tarts are impressive looking, but so easy to make (you can even cheat with pre-made pie dough). The combination of sweet and savory is delicious!

From the original site: Since my tea was for two, I didn’t need lots of food or huge portions. Mini would be the theme. Thankfully, the food came out wonderfully, and even more importantly, I learned that these recipes still taste pretty good at room temperature.

Sweets for your Sweet!

One of my favorite things to make during the holidays are marshmallows.  This year, I was busy taking care of a newborn and didn’t have time to indulge my candy-making yen.

I thought it would be fun to do a Valentine’s day version.  These fluffy candy hearts are a great alternative to those store-bought message candies we’ve all grown so accustomed to.

Ingredients
2 1/2 tablespoons powdered gelatiin
1/2 cup water
1 1/2 cup sugar
1 cup corn syrup
1/4 teaspoon salt
1/2 cup water
1 teaspoon vanilla extract
Powdered sugar for dusting.

You do need a candy thermometer for this. And a stand mixer. Without these two kitchen implements, this would be a very daunting task. With them, it becomes a 20-30 minute operation.

Begin by putting 2 1/2 tablespoons of powdered gelatin in the bowl of your stand mixer and pouring 1/2 cup cold water over it.

Let this sit for 20 minutes while you work on your sugar mixture.

Put 1.5 cups of sugar, 1 cup of corn syrup, 1/4 teaspoon of salt and 1/2 cup water in a heavy saucepan over medium heat. Stir until the sugar has dissolved. Brush down the sides of the pan with a wet pastry brush.

Insert your candy thermometer and let cook without stirring, until it reaches the firm ball stage (244 degrees Fahrenheit).

Once it reaches firm ball, remove it from the heat immediately and pour it into the mixer while it is on low speed. Increase the speed to high and let run for 15 minutes.

Turn mixer off, add 1 teaspoon vanilla extract, and mix until incorporated.

Prepare a baking pan – I used a half-sheet pan lined with foil – by generously coating it with powdered sugar.

Pour the marshmallow mixture into the pan. Right now it looks like a big mess – don’t worry. Wet your hands generously and spread it out flat. Dust the top with more powdered sugar and let sit for an hour or overnight to dry.

When you’re ready, use fun cookie cutter shapes to cut out your marshmallows, or just slice them in squares with a knife.  I dipped the edges of the fresh-cut hearts in Valentine’s-themed sprinkles for a festive twist.

Send these to school with your kids for an alternative to the typical Valentine’s candy, or give them to your sweetheart with their morning cup of cocoa.

Turkey soup with tomatoes and herbs.

Turkey soup with tomatoes and herbs.

Great soup, if you have turkey leftovers from holidays or if you just wish to have a rich, hearty soup for lunch. Any part of turkey will be good (I cooked mine from turkey neck and some leftovers). It takes 30-40 minutes to cook and the taste is amazing. The key to great taste are tomatoes and herbs.

Ingredients:
2/3 lb of Turkey meat
1 white onion
1.5 cup of boiled pinto beans (boil separately or canned rinsed very well)
½ can of diced tomatoes
2-3 potatoes
½ of red bell pepper
½ teaspoon of cumin
½ teaspoons of basil
½ teaspoon of oregano
Pinch of black pepper
Pinch of salt.
1 carrot (optional)
3 quarts (approx.) of water;
1/3 cup dill

Instructions:

Prepare the vegetables: peel onion, carrot and potato. Wash everything carefully.
Shred the carrot, cut the potato in mid-sized chunks, and finely chop the onion. Set half of onion aside.
Wash and chop the red bell pepper.
Take a 4 quart pan, put the turkey meat and cover it with water (approximately 3 quarts), set on medium heat and wait until it starts boiling. Take away the scum if any. Add salt, pepper, bell pepper, carrot, potato and onion. Boil for 15-20 minutes, then, add the tomatoes(canned diced tomatoes) and spices: cumin, basil, oregano. (if you have fresh herbs basil ,oregano etc. – add them at the end). Let the soup boil for 10-15 more minutes and then, just before serving add the finely chopped dill.
Serve warm, with toasted bread or garlic bread.

Top cupcakes with fondant (valentine’s version)

Many people are intimidated by fondant, but it’s really not that hard to make really lovely cupcakes with fondant and a few simple techniques.  Hello Naomi did this great tutorial on making these simple cupcake toppers, perfect for valentine’s day.  The technique could of course be used for all sorts of occasions– you’re only limited by your cookie cutters and your imagination!
