I have always loved Spanish omelettes because its a great combination of veggies, meats with egg. The only reason why I was always skeptical to make them as they needed to be baked a lil…….So after trying couple of different variations, finally came-up with a perfect recipe for a fluffy round omelette.

“Spanish Frittata” are basically Spanish omelette made with eggs, raw potatoes and onions but you may add or reduce ingredients as per choice. The original recipe calls for a thinly sliced raw potatoes which are fried in olive oil till slightly cooked along with onions and then cooked with egg mixture over stove-top and then kept in oven for a flaky crust.
