Summer’s here and it’s Hot!

Here are a few dishes from around the web to get you thinking of something different for summer fun…

Summer always inspires me to go mexican… and here’s a tasty looking appetizer! This Crab and Shrimp Campechana from Pink Parsley is right up MY alley! It’s basically a seafood salsa, tasty!

Pair that with something with something else Mexican inspired perhaps? From Jane Deere we have Baja-Style Beer Battered Fish Tacos with Creamy Cilantro Lime Sauce. Fish tacos are a favorite summer treat of mine too!

Not in the mood for mexico?

How about these Mango Jicama Lettuce Wraps, for a cool and healthy light dinner?

Or what about an interesting and updated take on the classic summer picnic favorite, the hotdog?

The Bitten Word features Muffuletta Hot Dogs! How clever is that?

Need an Asian inspiration for your picnic?

This Cold Soba Noodle Salad with Spicy Peanut Sauce would be perfect on a hot day…

Let’s finish up this summer inspiration list with something cool and fruity!  Gelato al Kiwi {Kiwi Gelato} looks divine. And the serving in the kiwi shell is inspired and fun!

We hope we’ve provided you a little inspiration to break out of your go-to summer food comfort zone!  What are your favorite interesting summer dishes? Do tell!
