I needed something fancy to decorate the equally fancy chocolate pie I was making for Valentine’s day.  I really like the look of a mound of chocolate curls haphazardly sprinkled over the top of a dessert, so I gathered my ingredients and quickly threw some together.

Ingredients

2 oz. semi-sweet chocolate

1 teaspoon vegetable shortening (I have done this with organic, non-hydrogenated shortening before, and it worked just as well. I was just out of the good stuff, and I didn’t feel like getting out in the snow.)

So this is how it is done! I won’t even admit to what I have been doing to make curls – but I will say – they aren’t too pretty! Can’t wait for an excuse to try this out!

I have always wanted to try chocolate curls, but have been too timid to give it a go. thanks for the step by step instructions, I might be brave enough to try. What’s the worst that can happen, having to eat my mistakes?? Shucks, I think I’m up for that. I do not have an offset spatula, what type of knife would work best for this?

    Hi Margo:

You could use something as simple as a table knife for this – anything with a thin flat edge would work. Happy curling (and you’re right – eating your mistakes is sometimes the best part:-))!

The chocolate curls sound absolutely fantastic. I really am not a very good cook the time to teach to give them a go! I guess I can always try a few different ways of doing it with some different implements. And as Margo says – all just have to eat my mistakes!

    Kind regards, John

so this makes small curls, how would you go about getting large thick curls? I love baking and these little tricks are key!

To make larger curls, I’d suggest using a large metal spatula, instead of the knife.
