<p>I love bread pudding, and I felt like the flavors in an Irish car bomb would really lend themselves to an interesting dessert combination.</p>
<p>I began by baking a loaf of <a href="http://moderndomestic.com/2009/11/12/rustic-guinness-bread/">Guinness Beer Bread</a> earlier in the week.  I won&#8217;t detail the entire process here, since I followed the recipe in the link to the letter. The bread had a lovely crumb, and a wonderful Guinness flavor.  Had I not already planned to use it for this recipe, I would have devoured it warm slathered with butter or made sandwiches with it.  Maybe corned beef sandwiches, even&#8230;.</p>
<p><strong>Bread Pudding Ingredients:<br />
</strong><br />
1 loaf Guinness Beer Bread, cubed.<br />
1 cup Baileys Irish Cream<br />
1 cup cream<br />
1 cup milk<br />
3/4 cup sugar<br />
4 whole eggs<br />
1 cup chocolate chips<br />

<p><strong>Jameson Whiskey Sauce Ingredients</strong><br />
8 oz. evaporated milk<br />
1 egg yolk, beaten<br />
1 cup sugar<br />
1 stick butter, cut into small cubes.<br />
2 jiggers whiskey</p>
<p>In a double boiler or heavy-bottomed saucepan over low heat, combine milk, egg yolk, sugar and butter.  Stir constantly until butter has melted and mixture has reached 160F and coats the back of a spoon.  Add whiskey and stir to combine. For a kid-friendly version, omit the whiskey and add a teaspoon of vanilla extract instead.  The booze in the pudding has been cooked out, so you don&#8217;t have to worry about it adversely affecting the kiddos.</p>
