About KCintheKitchen

I am a passionate home cook with more years experience than I care to admit. From the time I was a child making up pancake recipes with nothing more than flour and water, my favorite times, other than being with my husband and kids, are always in the kitchen. I’ve live many places; from Tacoma, Washington to Malibu, California, on to the south of France for 11 years and now Nokomis Florida. Each place offered its own kind of food and local specialties and I made it my business to become intimate with them all! While living in the south of France, we were only 45 minutes from Italy. Grocery shopping excursions to San Remo, Italy were a monthly occurrence. Not all that long ago, the southern part of France was actually part of what is now Italy so the regional cuisine has influences from both cultures. What a treat it was to explore all the traditional dishes from both countries! My goal is to share my passion for cooking with seasonal fresh ingredients; to explore with you all of nature’s bounty and travel together on a path of sharing great food at your family table! I’m No Charlie’s Angel Food Cake with Berry Coulis

Love Angel Food Cake but dread the thought of what to do with 12 or more left over egg yolks? Yah me too! I’ve only made one angel food cake ever for that very reason! But, as I passed the egg section at Publix the other day, seeing the cartons of liquid pasteurized egg whites […]

Ricky Ricotta Burgers

Burger quest number three! Figured there should be a beef burger in the mix right? But there are so many great burger recipes floating through the cyber world how can anyone possibly create something remotely new and different? Short answer is I don’t think it can be done! Not to be discouraged, I decided to […]

Rocking Rooster Burgers

I’m having loads of fun exploring burgers this week and actually, so is my husband Filippo! Today we’re using another alternate protein, chicken. I wanted to create a hearty burger that would satisfy a big manly appetite or even a teenage boy who loves his big meaty burgers. So after some experimenting I settled on […]

Proof Positive I’m CRACKERS!

Just a fun and super easy treat to make for family and friends! From the original site: With an entire isle of boxed crackers in every market why oh why would I want to make my own? Well I just felt like experimenting and guess what? I’m glad I did!

Dinner in Minutes; Frittata

One of the easiest main dishes you can whip up for a family dinner is an Italian Frittata! It is also one of the best ways to incorporate veggies into your kids’ diets. Remember that when you sauté zucchini and onions to the point of being caramelized they are sweet and delicious. So if your kids […]

Pizzazz Pizza

Have you ever seen the mozzarella logs that are rolled with prosciutto in your local markets? If you have, buy one and use it to make the best pizza you will ever have! Big statement right? Well, yes, but my husband did declare this to be the best pizza I have ever made…just saying…so I […]

Greek Leek Low-Fat Quiche

Ok, quiche is French but I used non fat Greek yogurt as the quiche base rather than crème fresh or heavy cream; hence Greek Quiche. You end up with a lighter and definitely healthier version of a traditional quiche. Once you start using non fat Greek yogurt I don’t think you will ever go back. […]

Strawberries for Breakfast, Lunch & Dinner

I LOVE strawberries! So when they are in season i use them as much as possible. Here I share more than a day’s worth of strawberry recipes! I hope you enjoy! From the original site: What’s your first thought when you think of strawberries? Strawberry Shortcake? Strawberry Daiquiri? Strawberries dipped in chocolate? The choices are […]

Cold Spinach & Prosecco Soup

I love serving this recipe in the spring and summer when the weather is warm and the veggies are at their best! From the original site: Prosecco; the secret to the lightest cold soup on the planet.

Georgia Pecan Crusted Grouper with Tomato Coulis

Sautéed fresh Grouper encrusted with freshly ground Georgia pecans then topped with a tomato, lemon, white wine and fresh herb coulis! You’ll be surprised at how the nutty crust flavor marries with the savory tomato coulis creating a tasting experience you’ll want again and again. From the original site: I thought if you can serve […]

Caribbean Shrimp & Scallops with Yellow and Red Pepper Lime Salsa

Sometimes you just want to be on vacation but real life gets in the way. I love this dish because it makes me feel like I’m on a Caribbean vacation! From the original site: Unfortunately, with two kids in university, this is about as close as we are going to get to a Caribbean vacation […]

Spoiled Daughter Sandwich

Yes I admit up front that I spoil my daughter Marina. Can’t help it, I adore her and she is so sweet it’s easy to go that extra step. When she was little and had sleepovers I’d bring the girls breakfast in bed; usually pancakes. When we moved to Florida, her bedroom was right next […]

Beyond the Marguerite Pizza

The combination of fresh tomatoes, mozzarella cheese and pesto just happens to be my daughter Marina’s favorite pizza. So simple and tasty; always one of the pizzas I serve on pizza night. Oh I should explain pizza night, shouldn’t I? Well at least once a month I make a batch of pizza dough or two, […]

Pulled Pork the Provencal Way

Pulled Pork Sandwiches were something I never had until we moved from the south of France to Venice Florida. Seems that pulled pork is something of a southern barbeque delicacy and every area claims theirs is the absolute best. I even have a friend from the Midwest who is adamant that pulled pork sandwiches are […]

Poulet Vol-au-Vent

The other evening Filippo and I dined at a marvelous new restaurant in downtown Sarasota, Brasserie Belge. The evening was marvelous from start to finish; starters were champagne and lobster croquettes, main was muscles for Filippo while I chose Vol-au-Vent and we finished with a shared Dame Blanche! I got to thinking ahead to dinner […]

Shrimp & Grits: A true Southern Belle visits Provence!

Paula Deen is the inspiration for A Southern Belle Visits Provence! The first time I tasted shrimp and grits was at Uncle Bubbas when I was in Savannah for the Real Women of Philadelphia live event to announce the talent search winners. All 16 of us finalists were treated to an incredible five days in […]
