Smoky Lentil Soup

Don’t forget- We love our readers!  Enter the Contest! I’m on a Good Eats kick lately (gotta get my Alton fix!), and I’ve been filling up the DVR with old episodes… I happened to catch the one about lentils the other night, and picky husband indicated that the lentil soup sounded tasty. I do a […]

Cucumber & Tomato Summer Salad

Editor’s Note: Republished for our Summer recipe series! This salad is one of my favorites for the Summer, when the cucumbers and tomatoes are in abundance, but it’s great anytime you can get the ingredients and need a reminder of summer! This is a wonderful side salad, or modify it to be a great vegetarian […]

Vegetable Stir Fry with Orange Ginger Sauce

“All of these vegetables need to be eaten before they go bad!!”  Sound familiar?  We went to visit my man’s parents for Mother’s Day and had just gotten my organic produce box the day before we left.   I contemplated taking the whole box with me, but it wouldn’t have fit in the overhead compartment, so […]

Spotlight: Potato Gnocchi Tater Tots

I ran across this recipe the other day at Deliciously Organic, and had to save it into my ‘to post’ folder! I love this updated take on that old favorite (and guilty pleasure), tater tots. I haven’t had this much fun making a recipe in a long time. I noticed these little treats in Food […]

Simple (almost) Summer Salad

As much as I really wanted to try out Dot’s frank-and-burger loaf recipe for dinner tonight (I mean, yum, right?), I opted to go a slightly simpler and (more than slightly) healthier route. I received some lovely avocados, tomatoes and corn in my produce box this week, and all of them were in need of […]

Roasted Broccoli with Feta Cheese

Things have been so overwhelmingly busy these days, I haven’t had time to even think. About anything. So meals that are simple and quick to throw together are really a must. It’s always easier to come up with a quick fix when you’ve got good ingredients on hand. Luckily, this week I received a bunch […]

Bibimbap with Veggies & Flank Steak

Bibimbap is a Korean dish whose name literally means “mixed cooked rice” or “mixed meal.  I made mine with Flank Steak, baby aspargus, baby bok choy, mushrooms, snap peas, onion and water chestnuts. Topped with a fried egg and served with sides of sesame seeds and sriarcha, Bibimbap is a flavorful and filling meal. Here’s […]

Vegetable Pasta Italiano

I just love a meal I can throw together in a few minutes.  This is super easy and makes use of prepared organic marinara sauce.  I’ve tried it with all kinds of pasta sauces and you just can’t go wrong.   I add veggies to it and prefer to leave them chunky, but my sister always “hid” the […]

Coleslaw

Here’s some trivia for you:  The term “coleslaw” arose in the 20th century as a partial translation from the Dutch term “koolsla”, a shortening of “koolsalade”, which means “cabbage salad”.   In the US, most coleslaw is made with a mayonaise-based dressing, but this is a recipe that has been a favorite in my family for […]

Cherry Tomato Pizza Margherita

I saw this today on Love and Olive Oil (thanks for the tip @thenovicechef!). I love the effect that the multicolored cherry tomatoes give this pizza… and it looks so tasty.. First of all, can I say how much I LOVE daylight savings time? Sure, it’s been 3 weeks and I’m still having trouble waking […]

Being creative with produce: orange tilapia filets with salad and quinoa

You may or may not know that Rawls, one of our esteemed contributors, is a huge proponent of Community Supported Agriculture programs (CSA’s) and of using organic and local produce. She is affiliated with Gaia’s Greens, a south-metro-Atlanta based CSA program and organic produce delivery service. I live on the north side of town, and […]

Carrot Souffle

[ed- Easter’s coming!  Dawn brings us a great idea to get your kids to eat Carrots!] I am NOT a fan of cooked carrots.  Never have been.  A few years ago my Step-mother hipped me to the Carrot Souffle at our local chain Cafeteria and I’ve been hooked ever since.  In the past I’ve just […]

Make Homemade Tomato Paste

After making this oh-so-super-easy homemade tomato paste you are never going to […]

Spotlight: Oven Fried Onion Rings

I posted these a few weeks ago to our Facebook page and they were so popular I figured I’d share them here as a Spotlight! The Brown Eyed Baker shares her recipe for doing onion rings, without a big ol pan of hot oil. So clever! I adore onion rings. Love them, really. Although I […]

How to Cook Greens……for St. Patricks Day!

Ok, I’m from the South, what can I say…. I love greens!   I got Kale in my Gaia’s Greens box last week, and Collards this week so it was time to cook up some greens!  And then when I realized it’s almost St. Patricks Day and Greens are, well….Green, I knew for sure that this […]

Happy Saint Patty’s day: just add pesto.

Sure you have to wear green so you won’t be pinched. I used to throw in a bright green hair ribbon when I was little, and I think we pinned on clovers more than once. Why not give green to your food too? Or greenify your kids’ lunches or get in the spirit during dinner? […]

How to Slice a Bell Pepper

There are many ways to slice or chop up a bell pepper, but this method will give you nice, neat slices or lovely little square cubes. For a dish where neatness and presentation count, I’d use the neat slices of pepper, and save the ‘less neat’ pieces to throw into an omelet or salad later.

Here’s a quick little picture tutorial to show you what to do!

Brussels Sprout

Wow – do Brussels Sprout have a bad rap.  Never has there been a vegetable so maligned without basis. Foolish person (aka my husband):  “Like, OMG Brussels Sprouts are like, so gross!” Me:  “Have you ever had one before?” Foolish person:  “No.  I don’t need to have one to know how much I hate it!” […]

Guestwhirl! Zesty Twice Baked Potatoes

A big thanks to reader Melissa (@ladyvella) for submitting this easy, tasty, and money saving idea!  These would be great as a side dish, or if cut smaller, party appetizers. How to Steam Asparagus

Asparagus is a favorite vegatable around our house, and although I love it grilled, roasted, sauteed, stirfried—you get the idea—it’s a quick and wonderfully healthy side dish when just simply steamed. The picky 4 year old is even a fan… If served without an sauce I allow him to eat it with his fingers, which […]

How to Chop an Onion

This is one of those technique that seams obvious in retrospect, but never occurred to me until someone showed me. So I figured there might be some others out there who could benefit from it! This is a great technique to use to get nice, even squares of chopped onion. See the descriptions below each […]

Pretty & Easy: Asian “Stirfry” with Chili Sauce

A go-to meal in everyone’s repertoire should be a basic stir fry. And once you get the basics down, you can improvise and improve on it to your hearts content. Technically, this isn’t a stir fry, because I don’t really stir-fry the meat, but you get the general idea. And of course, the chicken used […]
