The other day my husband mentioned going to a local Baconfest event (bands, fun, & bacon), but we didn’t manage to make it. So with friends, we decided to have our OWN BaconFest that evening! My cool friend Beth made these an an appetizer, and after oohing and aahing I insisted on stealing the recipe! Like a retro rumaki, but with sweet potato inside. To give credit where due, my friend got the inspiration from a recipe on the Kitchn, but she substituted sweet potatoes for white potatoes, and I honestly can’t imagine it being any better.
Easy peasy to make, too. Preheat your oven to 400. Chop your sweet potatoes into 1 inch pieces, and either boil or steam them til just soft (can stab with a fork). Toss sweet potatoes with olive oil, coarse salt, pepper, and chopped rosemary.
Line a sheet pan with foil. Wrap each chunk of sweet potato in 1/2 a slice of bacon, stab with a toothpick to hold the bacon in place. Place on pan.
Bake for 10-15 min on one side, then flip, and 10-15 on the other side… or until (as Alton would say) golden brown and delicious.
