Aunt Suzie’s Muffins

Our family has been making this recipe for decades. It always gets raves at every large gathering that includes breakfast. We have selfishly kept this recipe in the family and even now they are against me sharing it. I attempted to find a similar (identical) recipe online with no success. The world needs to have this recipe, and in spite of my family’s wishes, here it is!

Ingredients:

5c. sifted unbleached flour

2c. sugar

5 tsp. Baking Soda

1 tsp. salt

2c. All Bran cereal

2c. 40% Bran Flakes

2c. regular wheat germ

2c. chopped dates

2c. chopped walnuts

1c. vegetable oil

4 eggs, slightly beaten

2c. water

1 qt. buttermilk

Instructions:

Mix first 8 ingredients together in a LARGE mixing bowl.

Combine liquid ingredients thoroughly; add to dry mixture, stirring to combine.

Stir in nuts.

Bake in greased muffin tins filled 2/3 full at 400 degrees (no convection) for 20 minutes.

Batter can be stored (covered) in the refrigerator for up to 6 weeks!

NOTE: Muffins stick horribly to paper muffin cups!

The muffins are even better with more dates and nuts…
