Spotlight: Black Bean Burgers

I was just thinking about making black bean burgers the other day, and then I ran across these vegan Black Bean Burgers today at Can You Stay For Dinner.  This was just the kind of recipe I was looking for.  A black bean burger, or patty, should not try to replicate a hamburger, but revel in the fact that it is made of yummy beans!  Check out her recipe for making these burgers… she topped hers with avocado, but I think I’d personally love one topped with a slice of fried green tomato, and some salsa.

This vegan black bean burger is just that. I adore the play of textures created from mashing only half of the beans and leaving half intact. And then there’s the subtle flavor of sauteed vegetables, sweetness from a dollop of ketchup, a spicy kick from cumin and chili powder, and sharpness from dijon.I topped my burger with lettuce, tomato, slices of creamy avocado, and a sprinkling of fresh cilantro. Ba-da bing, ba-da bang, ba-da boom.

These are a great idea to make ahead, and then heat up for a quick dinner on a weeknight. They’d also be good in a packed lunch.
