Lemon Sunrise Muffins

I’m a huge fan of lemon…lemon cake, lemon cookies, lemon candy, lemon pie. You name it, I’m there!! However, I had never made lemon muffins before until my oldest daughter had a friend stay the night. We got up needing something fresh and yummy to wake us up for the day. I looked through the cabinets and found a lemon cake mix and lemon pudding mix. Hmmmm… After a few minutes I thought, why not? I created a simple lemon muffin with crumble topping and lemon pudding glaze. I think they were a hit. My oldest daughter ate 3 fresh out of the oven. Hope they make your morning as happy as ours!!

Ingredients:

18 muffins:
1 lemon cake mix
1/2 box (3.5 oz) lemon pudding
3/4 c. water
3 eggs
1/3 c. vegetable oil

Topping:
1/2 c. sugar
1/3 c. flour
1/2 stick of butter or margarine, diced
1 tsp. cinnamon

Glaze:
1/2 box (3.5 oz.) lemon pudding
1/2 c. powdered sugar
1/2 tsp. vanilla extract
3 Tbsp. milk

Instructions:

Mix muffin ingredients together until fully combined. Fill paper muffin papers 3/4 full. Mix all topping ingredients together with fork until crumbly. Sprinkle 1 tsp. over muffins before baking. Bake at 350 degrees for 18-20 minutes until lightly browned. Top with glaze while warm and serve.
