Roast Pork Loin With Currant Sauce

Most people think that roasting a hog is not easy. However, a roasted pork loin is an easy alternative. You can make it healthier by garnishing it with roasted vegetables. Though the best hog roasts may be prepared by hog roast caterers, the following recipe is also delicious. Try out this simple yet mouth watering recipe.


• Boneless and roasted pork loin (4lb)

• Soy sauce (1/2 cup and 1 tbsp)

• 2 minced garlic cloves

• A little dried thyme

• Cooking sherry (1/2 cup and 2 tbsp)

• Dry mustard ( 1 tbsp)

• Ground ginger (1 teaspoon)

• Currant jelly (1 jar)

• 1 tbsp of olive oil


Put the roasted pork loins in re-seal able plastic. Take a large bowl and put the ½ soy sauce, ½ of the cooking sherry, mustard, ginger, garlic and thyme. Mix well. Now pour this marinade inside the plastic containing pork loin from the top. Seal the bag and refrigerate for at last 3-4 hours.
Preheat the oven to 165 degree Celsius. Now roast the marinated pork without any cover for about 3 hours. Turn now and then and keep basting with olive oil after every few minutes.
Now to make the sauce, take a saucepan over medium flame and melt the currant jelly. Add the remaining sherry and soy sauce. Stir well and use this sauce to garnish the roasted pork loin for an amazing taste.
