What do you do when life gets in the way of good food?

Life has been pretty hectic these days. On top of hubby’s two jobs, my part-time job and our two little ones, we’ve decided to move. Which means packing. And cleaning. And getting our house ready to go on the market. And working. And cleaning some more.

So where, in the midst of all that, do we find the time for cooking. Or eating, for that matter?

This, I think, is the trap that so many of us fall into. This is why convenience foods are such a big hit.

Did you know that you can buy macaroni and cheese IN A CAN? Don’t worry – I haven’t fallen prey to that one yet, but I just thought you might like to know that such a thing exists. Or maybe you’d rather remain blissfully ignorant to that fact. I know I wish I had.

It is easy to see, though, how so many people do fall prey to such things. When you’ve got kids involved in lots of different activities, and you work, and you’re trying to keep your house in order, when do you find time to cook a healthy meal? On a budget?

I know one thing that I try to do is make large quantities of things on the weekend – like soup or pot roast or something – that can be used again (and again) later in the week. Leftovers really are the busy family’s best friend. And don’t undervalue the simple sandwich or omelet for a quick, healthy and simple weeknight meal.

So what do all of you busy, multi-tasking moms out there do when you feel like you just don’t have time to get dinner on the table on top of everything else?
