We’ve already had an Irish Car Bomb Ice-cream recipe posted on the site, but I felt like I really needed to share this yummy concoction with you guys.
I love bread pudding, and I felt like the flavors in an Irish car bomb would really lend themselves to an interesting dessert combination.
I began by baking a loaf of Guinness Beer Bread earlier in the week. I won’t detail the entire process here, since I followed the recipe in the link to the letter. The bread had a lovely crumb, and a wonderful Guinness flavor. Had I not already planned to use it for this recipe, I would have devoured it warm slathered with butter or made sandwiches with it. Maybe corned beef sandwiches, even….
Bread Pudding Ingredients:
1 loaf Guinness Beer Bread, cubed.
1 cup Baileys Irish Cream
1 cup cream
1 cup milk
3/4 cup sugar
4 whole eggs
1 cup chocolate chips
- An irish car bomb is basically a pint of Guinness that has had a jigger filled with a mixture of Baileys and Jameson dropped into it. You chug the whole thing. It kind of tastes like chocolate milk for grown-ups. They’re yummy, but dangerous.
- Guinness beer bread. I cubed it and tossed it with a little butter, then toasted it to remove some of the moisture.
- For the custard, I combined cream, milk, and baileys along with four whole eggs and 3/4 cup of sugar.
- I placed the dried bread cubes, a cup of chocolate chips and the custard in a buttered 9×11 baking dish and let it soak for 30 minutes.
- Bake it in a water bath in a preheated 350F oven for 30-40 minutes.
- Serve warm with Jameson Whiskey Sauce poured over it.
Jameson Whiskey Sauce Ingredients
8 oz. evaporated milk
1 egg yolk, beaten
1 cup sugar
1 stick butter, cut into small cubes.
2 jiggers whiskey
In a double boiler or heavy-bottomed saucepan over low heat, combine milk, egg yolk, sugar and butter. Stir constantly until butter has melted and mixture has reached 160F and coats the back of a spoon. Add whiskey and stir to combine. For a kid-friendly version, omit the whiskey and add a teaspoon of vanilla extract instead. The booze in the pudding has been cooked out, so you don’t have to worry about it adversely affecting the kiddos.
