Nicely Dense Pound Cake for Decorating

Last weekend I made cake and cupcakes for my son’s birthday.  I needed cake and cupcakes that were dense enough to be trimmed into shape, and tried a few different recipes.  This one from last week was very tasty, but too crumbly for this purpose.  So I tried another, and it worked out well!

Although not my regular pound cake recipe (this is my grandma’s pound cake!) this is the pound cake I used to make the clone trooper cupcakes, and the body of the Perry the Platypus cake.

  • 2 1/4 c cake flour, sifted.
  • 1 1/4 teas salt
  • 1 teas baking powder
  • 2/3 c shortening
  • 1 1/4 c sugar
  • 1 teas vanilla
  • 2/3 c milk
  • 3 eggs

Cream sugar, shortening for 3 minutes, on medium speed.  Add milk and vanilla, mixing.

Sift together dry ingredients, and add slowly.  Beat for 2 minutes on low.

Add eggs 1 at a time, beating for 1 minute after each.

Grease pan well.  I like to use a sling of parchment paper for ease of removal.

Bake at 300 for ~1 hr 25 minutes.
