Pineapple Halwa is also called Pineapple Rava Kesari or Kesari Baath in South India, which is a very popular sweet dish in South Indian menu. Kesari Bath is very much similar to Sooji Ka Halwa only difference is kesari bath is cooked in saffron with loads of ghee in it. As I told you earlier also about my Pineapple mania so this is my second recipe in that series, first recipe was Pineapple Jam.
½ Cup Semolina (Rava)
1-Cup Pineapple Juice
1 ½ Cup Water
3 Pineapple Slices diced into small cubes (Optional)
¼ Cup Sugar or adjust as per the taste of pineapple
A pinch of yellow color (Optional)
¼ Cup Ghee + 1 tbsp
In another pan boil pineapple juice, water and sugar. Add pineapple chunks, food color and bring to boil once. Keep aside
Heat ¼ Cup ghee in heavy bottomed pan and roast semolina nicely over low flame until golden brown in color.
Reduce the flame and add the liquids with one hand and mix simultaneously using other hand. Stir well to avoid any lump formation. Stir continuously till the rawa gets cooked well.
