Easy Italian Bruchetta

Many of you know that I have an organic produce business, and I also coordinated AND had a booth for my business at the Fayette Co. Earth Day Festival here in Georgia.   I sell a great Marinara Sauce through my business and had it at my booth at the festival.  I also had fresh organic herbs and my man, David, made some fresh bread so I could do some samples of the Marinara Sauce at my booth.  Wow! What a winning combination:  A baguette made with our Heartland Mills organic flour + Parisa’s Marinara Sauce + fresh organic basil + a sprinkle of parmesean cheese = oh my gosh good bruchetta!!!

This will make a great appetizer for an Italian meal or a quick and easy lunch!

Easy Italian Bruchetta

Makes 6-8 servings depending on baguette size (2 peices each serving)

  • One French Baguette, sliced on the diagonal
  • Olive oil
  • Prepared Marinara Sauce (I use Parisa’s Organic because that’s what I sell)
  • 1 clove garlic, cut in half lengthwise (a fat clove works best)
  • 1/4 cup parmesean cheese or to taste
  • 1/4 – 1/2 cup chopped basil, to taste

Slice the baguette on the diagonal into 1/2 – 3/4 inch slices and lay slices on a cookie sheet.  Using a brush, brush olive oil on each slice, enough to coat (or to taste).   If you don’t have a brush, then drizzle it on the bread and spread with a knife or use the olive oil spray.   Broil in the oven until they are lightly browned, 2-4 minutes.   Being careful not to burn yourself, rub each peice of bread with the clove of garlic.  The more you rub, the stronger the garlic taste.   Put a spoonful of Marinara Sauce on the bread, sprinkle with Parmesean cheese and then put back under the broiler to melt the cheese.  Sprinkle with chopped basil and serve.

Better get one for yourself fast because they will disappear in no time!
