Thick and chewy cookie bars stuffed with M&M’s. Seriously delicious! Will feed a crowd :)
> 2 cups + 2tbsp plain flour
> 1/2tsp bicarb
> 1 1/2 sticks (about 170g) butter/marg
> 1 cup light brown sugar
> 1/2 cup caster sugar
> 1 egg + 1 egg yolk
> 2tsp vanilla extract
> 135g bag of M&M’s

You will need a 9×13 inch pan, greased and lined.
Preheat oven to 160 degrees C. Place the butter in a small saucepan and melt. In a separate bowl place the flour and bicarb. Leave to one side.
In a large bowl or the bowl of your stand mixer, place the melted butter and sugar and mix until the sugar has dissolved and it’s well incorporated.
Add in the egg, egg yolk and vanilla extract. Mix until combined. Add in the flour and mix until just combined. The dough will be very stiff. Fold in the M&M’s by hand with a spatula.
Place in baking tin and smooth out. Bake for about 25 minutes, until a skewer inserted comes out clean. They will look pale, slightly puffy and almost crackled on top. Leave to cool in the tin. Once cooled, remove from pan and slice into bars.
Will keep in airtight container for 4 days.
