Good things come to those who wait. This especially holds true when creating this slow cooker Chipotle Chicken and Noodle recipe. Personally, I like to put everything into the cooker when I wake up, so I have a delicious hot dinner waiting for me when I return from a long, hard, cold day of work.
This slow cooker recipe is assembled quickly with chicken breasts, egg noodles, and crushed tomatoes. The chopped chipotle peppers add the kick that captures my taste bud’s undivided attention. If your taste buds can handle it, feel free to add a dash of chili powder for extra zest.
Ingredients:
Original No-Stick Cooking Spray
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 can (28 oz each) Hunt’s Crushed Tomatoes
2 tablespoons chopped chipotle peppers in adobo sauce
3-1/2 cups water
6 ounces dry egg noodles, uncooked
Instructions:
1. Spray inside of slow cooker with cooking spray. Combine chicken, tomatoes, chipotle peppers and water in slow cooker. Cover with lid.
2. Cook on LOW 8 hours (or on HIGH 4 hours), stirring in noodles for the last 30 minutes of the cooking time.
3. Stir before serving.
If a thicker recipe is desires, only add 3 cups of water.
