Shrimp & Fish Fajita Tacos

Are you looking for a simple but impressive looking meal, good for a romantic date night, or dinner with friends?  This recipe is basically a marriage of my fish tacos & shrimp fajitas, and could be done with either fish, shrimp, or a combination of both.  It’s a very healthy meal– make extras and you’ll have a great leftover lunch for tomorrow too!

Alternate serving idea: Skip the ‘fajita’ part of this (the onions/mushrooms/peppers) and simply serve with lettuce and tartar sauce for a quick & healthy family meal.

Meat (at least 1/2 lb per person):

  • 3/4 lb Large shrimp
  • 3/4 lb Tilapia or other firm white fish.

Veggies:

  • <1 red bell pepper
  • 1-2 medium yellow onions (I like lots of onions, personally)
  • 6oz sliced mushrooms
  • ~1 cup chopped fresh spinach
  • ~1/3 c chopped fresh cilantro
  • Salt & Pepper
  • Soft taco size flour tortillas (~3 per person)

Feedback on this dinner from picky husband was that it was great, but the shrimp could have been in smaller pieces.  So take that under advisement.  Feedback from picky 4 year old was that he loved the shrimp & fish, but required shredded cheddar and no veggies in his tacos.

Extra shrimp or fish?  Extra cilantro? While you’re at it and the food’s out, make yourself a tasty ceviche.. It will be lovely and easy to pull out for lunch tomorrow or as an appetizer for tomorrow’s dinner!
