Roasted Kale

This is a healthy, relatively quick way to cook kale.  The kale ends up crispy and even your picky non-greens eaters may give these a try.

Preheat oven to 400F

Kale (2-3 bunches – I used 3 in these pictures)

Salt/Pepper/Olive Oil/Minced Garlic/(optional) Cumin

  1. Wash your Kale, then trim out the center stem.
  2. Rip into smaller pieces.
  3. Drizzle with olive oil, add salt & pepper, and a heaping teaspoon of minced garlic (I just used the jarred stuff this time).
  4. Toss to coat.
  5. Spread on large foil lined roasting pan.
  6. Place in oven for 15-20 minutes, tossing occasionally, until the kale is crispy.
